In 2000, David and Danielle set out to conquer this 20-hectare estate in the foothills of the Montagne Noire in the Minervois. It was a mad project to restore this ancient estate in a majestic setting between the mountains and the garrigue of the Causse de Vialanove. Lauraire des lys is a family affair, with everyone pitching in, and the basics of the trade, which were initially unfamiliar, are quickly mastered, and hard work combined with precision soon pay off. The environment is respected here, and the climate is provident, with wind, cool temperatures and often abundant rainfall. The estate uses organic farming methods, and the grapes are harvested and sorted by hand.

The grape varieties are mainly Grenache, Syrah and Carignan, with low yields ranging from 15 to 30 hectolitres per hectare.

The wines are powerful, spicy and elegant, with notes of red fruit, cherries and liquorice. The tannins are present and supple.
